Preheat oven to 375°. Mix the oil, sugar, cinnamon, nutmeg, and oats together. Core apples with either spoon or apple corer leaving the bottom ½” of the apple intact. Place cored apples in a square baking dish and spoon mixture evenly into apples. Place warm water into the dish around the apples. Bake for 30-45 minutes or until fully cooked. Place apples in small bowls, add scoop of ice cream on apples, and drizzle balsamic on top. Happy Fall!
