Balsamic Caramel Popcorn

Preheat oven to 325° and line baking tray with parchment paper. Heat 2 T oil and kernels in heavy bottom pan over medium high heat. Shake pot while kernels are popping until 5 seconds between pops. Pour popcorn into a large bowl. Heat 1 T oil, sugar, honey and balsamic in a non-stick pan to dissolve sugar. Bring to a low boil without stirring until the caramel darkens, 3-5 minutes. Carefully add baking soda, it will foam up. Stir, pour over popcorn, and toss to coat all kernels. Pour onto the baking tray and spread out evenly. Bake for 10-15 minutes, sprinkle with salt, and break into smaller pieces when cool enough to handle.
