Barbacoa

ingredients

  • 2 T Taste OVS Chipotle Olive Oil
  • 2 T Taste OVS Dark Chocolate Balsamic
  • 1 small white onion, chopped
  • 4 cloves garlic, minced
  • 3 lbs beef chuck roast (fat trimmed), cut into 2” chunks
  • 2 chipotles in adobo sauce, chopped
  • ¼ c fresh lime juice
  • 3 bay leaves
  • 3 T Generation Grrrls Barbacoa Seasoning
  • ½ c beef stock

instructions

Sauté onion and garlic in oil and balsamic. Combine the rest of ingredients in the bowl of a slow cooker and add onion mixture. Toss gently to combine. Cover and cook on low for 6-8 hours or until the beef is tender and falls apart easily when shredded with a fork. Using two forks, shred the beef into bite-sized pieces. Toss the beef with the juices, then cover and let the beef soak up the juices for an extra 10 minutes. Remove the bay leaves. Serve using a pair of tongs or slotted spoon and enjoy!
