Honey Balsamic Glazed Carrots
Preheat oven to 375°. In a small bowl, whisk together the vinegar, oil, honey, salt, and pepper until combined. Place carrots and thyme on a baking sheet pan lined with parchment paper, then drizzle ¾ of the glaze over them and toss. Roast for 10-15 minutes. Drizzle remaining glaze over carrots and toss. Reduce temperature to 350° and continue to cook for 20-25 minutes. Remove sprigs before serving.
