Marinated Red Onions

Add onions, salt and balsamic in a bowl, toss to combine, and allow to sit for 10 minutes. Add olive oil and peppercorns and allow to sit for another 20 minutes. Transfer them to an airtight container and store at room temperature for 3-4 days. May be stored in refrigerator up to two weeks. Use leftover marinade to make a vinaigrette!
