One Pan Balsamic Chicken

ingredients
- ¼ c Taste OVS Neapolitan Herb Balsamic
- 4 T Taste OVS Garlic Olive Oil, divided
- 2 T Honey
- 1 T Dijon mustard
- 8 oz. grape tomatoes, halved
- 8 oz. fresh mozzarella pearls
- ¼ c chopped basil
- 1 lb. boneless, skinless chicken breasts, pounded to even thickness
- Salt and Pepper
instructions
In a bowl, whisk balsamic, 2 T olive oil, honey, and Dijon mustard. Season with salt and pepper, set aside. In a separate bowl, toss together tomatoes, mozzarella, and basil, season with salt and pepper, set aside. Preheat oven to 400°. Heat remaining olive oil over medium-high heat in a large oven-safe skillet. Season chicken all over with salt and pepper. Once oil is hot, add chicken to skillet in a single layer. Cook 1-2 minutes on each side or until lightly golden brown. Add the balsamic mixture. Use a wooden spoon to scrape the pieces from the bottom of the pan. Immediately remove pan from heat and add tomato mixture over the top of chicken. Bake uncovered 15-20 minutes or until chicken is fully cooked through. Remove from oven and let rest for 5 minutes before serving.
