Pineapple Upside Down Cake

ingredients
Topping:
- ¼ c butter, melted
- ½ c brown sugar
- 20 oz. can pineapple slices, reserve juice
- Maraschino or gourmet cherries
Cake:
- 1 ½ c flour
- 1 ½ t baking soda
- 1 ¼ t salt
- ¼ c butter, melted
- ¼ c Taste OVS EVOO
- ¾ c granulated sugar
- 2 large eggs
- 1 t vanilla extract
- ¼ c pineapple juice reserved from can
- ¼ c Taste OVS Pineapple Balsamic
instructions
Preheat oven to 350°. Drain juice from can, reserve for batter, and pat dry slices. Pour melted butter into 9” cake pan, cover bottom and use spatula to grease the sides of the pan. Sprinkle brown sugar evenly over butter. Arrange pineapple slices in the bottom of the pan and place cherries in center of pineapple rings. For batter: Whisk flour, salt, and baking soda, set aside. Whisk butter, oil, and sugar until well combined. Add eggs, one at a time, beating well after each. Stir in the vanilla extract. Alternate adding dry ingredients, juice, and balsamic into mixture until combined. Pour batter over the slices, spread evenly. Bake 30-35 minutes, until toothpick comes out clean. Let cool for 10 minutes. Carefully invert the cake onto a serving plate. Let cool completely.
