Red, White, and Blue Fruit Salad

ingredients
- 1/2 T honey
- Fresh lime zest
- 1 T minced fresh mint
- 8 ounces Fontina cheese
- 3 c strawberries
- 2 c blueberries
- 1 ½ cup blackberries
- Fresh mint garnish, optional
instructions
Whisk the olive oil, balsamic, honey, and lime zest in a small bowl. Stir in mint. Cut fontina with a 1” star cookie cutter, using a tool to press and release cheese from cutter at star points. Stars then can be sliced into ¼” thick slices. Combine berries in a large serving bowl. Top with fontina. Toss with dressing. Garnish with mint, if desired.
