Roasted Brussels Sprouts

ingredients

  • 1 ½ lbs. Brussels Sprouts
  • 3 T Taste OVS Leek Fused Olive Oil
  • ¼ t salt
  • 1/3 c dried cranberries
  • 2 oz. crumbled goat cheese
  • 2 T Taste OVS Blackberry Ginger Balsamic

instructions

Preheat oven 425°. Trim ends off sprouts and slice lengthwise. Soak cranberries in warm water, set aside. Line baking sheet with parchment paper. Place sprouts in a large bowl, then toss with olive oil and salt until evenly coated. Place sprouts cut side down on baking sheet. Roast until the tops and bottoms of the sprouts are caramelized and brown, and centers are creamy, about 20-25 minutes. Transfer sprouts to a bowl, drain cranberries, sprinkle cranberries and goat cheese on top. Drizzle balsamic over the dish.
